This is a special event class where you will be invited into the creamery. You will learn how to make artisanal Cheddar or Gouda in a 50 gallon cheese vat pasteurizer. The day starts with our fresh farm milk. You will inoculate the milk, mix rennet in the milk and set the cheese. As time passes you will learn about the perfect break, cut curd, cook curd, hoop wheels of cheese and press cheese. Not only will you make a cheese, you will also be invited to work with other cheeses that may needed to be attended to that day.
At the end you will receive a wheel of cheese that you personally made. The cheese will need to age for 3 months before it is ready in our caves. When it is ready we will wedge your wheel into 8 wedges, vacu sealed and label the wedges with the appropriate label that says Made by: your name. This makes a perfect gift either as a class or for the recipient who receives the cheese
This is a 7 to 8 hour class that starts with pasteurized milk and finishes with cheese being pressed.
