Santa Fe Farmers Market Favorites - Artisan Cheeses

If you are crazy for firmer cheeses, Old Windmill Dairy, does a sensational job on taking a twist of two classics; cheddar and gouda. Sandia Sunrise Smoke Goat Gouda is a Hickory smoked Goat Milk Gouda that took 5th place at the United States Champion Cheese Contest. It scored was 99.45 just 2 tenths of a point from first place. You ask why not first place? The judges said the “texture and taste were great,” but the wheel of cheese was lop sided. It was like being at the olympics, they grade on everything. McIntosh cave aged goat cheese use to be called McIntosh Cheddar. For years Old Windmill dairy was trying to make a goat cheddar, however, what they discovered was a unique blend of mild flavors…cheddar and manchego. This cheese is best served at warm temperature so the flavors will come through and please your pallet.
The cheeses are shipped in our handsome tote that is great for a lunch pack or a six pack. The tote is insulated featured with a handle and two dry pockets.

Visitors and locals that come to Santa Fe Enjoy Old Windmill Dairy Mcintosh (a goat cheddar manchego cheese) and the award winning Sandia Sunrise Smoked Goat Milk Gouda. One half pound of our sensational semi hard goat cheeses. McIntosh cave aged goat cheese has taste profile of a mild cheddar to Manchego. It is nutty, buttery with a hint of mild cheddar to manchego flavor. It is a great compliment to Sandia Sunrise Smoked Gouda. Another award winning goat cheese.
These same vaireties are available in cow milk. Our Jersey are free ranged at the farm.

Taking Care of your Cheese

These cheeses are best stored in the refrigerator. Plastic wrap the cheese tightly to keep the air off as they can dry out or grow mold. If you have a vacu seal this works best for resealing the cheese and storing them in the refrigerator.

Pairings
If you are doing a beer or wine pairing, these cheeses will make an awesome choice.

Cheddar /McIntosh – best served with an IPA (it really cuts back on the hoppy flavor of the beer. When combined the beer enhances the cheese flavor. As for wine we recommend a fruity champaign or a Sauvignon with a grapefruit subtlety, like Kim Crawford Sauvignon Blanc.

Smoked Gouda /Sandia Sunrise Smoked Gouda - pairs nicely with a stout or a red ale. I suggest topping a french onion soup or a grilled portabello mushroom and a slice of beef steak tomatoe.

Both cheeses make a great Mac & Cheese, Grilled Cheese Sandwich or top a nice toasty bread.
